Ingredients
- 2 ripe plantains
- 1 cup mixed seafood (shrimp, squid, and/or scallops)
- 1/2 onion, finely chopped
- 2 garlic cloves, minced
- 1/2 red bell pepper, diced
- 1 tomato, seeded and chopped
- 1/4 cup cilantro, chopped
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup vegetable oil for frying
Instructions
- Peel the plantains and cut them into 1-inch thick slices.
- In a large skillet, heat the vegetable oil over medium-high heat. Fry the plantain slices until golden brown, then remove and flatten them with a tostonera or the back of a heavy glass.
- In the same skillet, sauté the onion and garlic until softened. Add the mixed seafood, bell pepper, and tomato. Cook until the seafood is fully cooked.
- Stir in the cilantro, cumin, paprika, salt, and pepper. Cook for an additional 2-3 minutes, then remove from heat.
- Take each flattened plantain slice and place a spoonful of the seafood mixture on top. Fold the plantain over the filling to create a stuffed plantain. Secure with toothpicks if necessary.
- Return the stuffed plantains to the skillet and fry for 1-2 minutes on each side until crispy and golden brown.
- Remove from the skillet and drain on paper towels. Serve hot and enjoy!
