Ingredients

  • 2 live Dorset lobsters
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 1/4 cup tomato paste
  • 1/2 cup dry white wine
  • 4 cups fish stock
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 4 slices of bread, cubed
  • 2 tablespoons olive oil

Instructions

  1. Bring a large pot of water to a boil. Add the live lobsters and cook for 8 minutes. Remove the lobsters and let them cool.
  2. Once cooled, remove the lobster meat from the shells and set aside. Reserve the shells for the bisque.
  3. In a large pot, melt the butter over medium heat. Add the onion, carrots, celery, and garlic. Cook until the vegetables are soft.
  4. Add the tomato paste and cook for 2 minutes. Pour in the white wine and fish stock. Add the lobster shells and simmer for 30 minutes.
  5. Strain the bisque, discarding the solids. Return the liquid to the pot and add the heavy cream. Simmer for an additional 10 minutes.
  6. Season the bisque with salt and pepper, then add the reserved lobster meat. Cook for 5 minutes until the lobster is heated through.
  7. While the bisque is simmering, make the garlic croutons. In a pan, heat the olive oil over medium heat. Add the bread cubes and garlic, and toast until golden brown.
  8. Serve the Dorset Lobster Bisque in bowls, topped with the garlic croutons.
