Ingredients
- 2 live Dorset lobsters
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 1/4 cup tomato paste
- 1/2 cup dry white wine
- 4 cups fish stock
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
- 4 slices of bread, cubed
- 2 tablespoons olive oil
Instructions
- Bring a large pot of water to a boil. Add the live lobsters and cook for 8 minutes. Remove the lobsters and let them cool.
- Once cooled, remove the lobster meat from the shells and set aside. Reserve the shells for the bisque.
- In a large pot, melt the butter over medium heat. Add the onion, carrots, celery, and garlic. Cook until the vegetables are soft.
- Add the tomato paste and cook for 2 minutes. Pour in the white wine and fish stock. Add the lobster shells and simmer for 30 minutes.
- Strain the bisque, discarding the solids. Return the liquid to the pot and add the heavy cream. Simmer for an additional 10 minutes.
- Season the bisque with salt and pepper, then add the reserved lobster meat. Cook for 5 minutes until the lobster is heated through.
- While the bisque is simmering, make the garlic croutons. In a pan, heat the olive oil over medium heat. Add the bread cubes and garlic, and toast until golden brown.
- Serve the Dorset Lobster Bisque in bowls, topped with the garlic croutons.
