Ingredients

  • 500g Secreto Ibérico
  • 2 quinces, peeled and diced

  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season the Secreto Ibérico with salt and pepper.
  2. Heat olive oil in a pan over medium-high heat.
  3. Sear the Secreto Ibérico for 3-4 minutes on each side until golden brown.
  4. Remove the pork from the pan and set aside.
  5. In the same pan, add the diced quince and honey.
  6. Cook for 5-7 minutes, stirring occasionally, until the quince is soft and the mixture has thickened into a glaze.
  7. Return the Secreto Ibérico to the pan and coat it with the quince glaze.
  8. Slice the Secreto Ibérico and serve with the quince glaze on top.
