Semolina Pudding (rava Kesari)

Ingredients

  • 1 cup semolina (rava)
  • 1 cup sugar
  • 4 cups water
  • 1/4 cup ghee
  • 1/4 teaspoon saffron strands
  • 1/4 teaspoon cardamom powder
  • 2 tablespoons chopped nuts (almonds, cashews, pistachios)
  • 2 tablespoons golden raisins

Instructions

  1. In a pan, heat ghee and roast the semolina until it turns golden and aromatic.
  2. In another pan, heat water, add saffron, and bring it to a boil.
  3. Slowly add the roasted semolina to the boiling water, stirring continuously to avoid lumps.
  4. Add sugar and mix well. Cook until the mixture thickens.
  5. Add cardamom powder, chopped nuts, and raisins. Mix well and cook for a few more minutes.
  6. Remove from heat and serve hot.
