Semolina Pudding (rava Kesari)
Semolina Pudding, also known as Rava Kesari, is a popular sweet dish from Karnataka Cuisine. It is made with semolina, ghee, sugar, and flavored with cardamom and saffron, giving it a rich and aromatic taste.
Ingredients
- 1 cup semolina (rava)
- 1 cup sugar
- 4 cups water
- 1/4 cup ghee
- 1/4 teaspoon saffron strands
- 1/4 teaspoon cardamom powder
- 2 tablespoons chopped nuts (almonds, cashews, pistachios)
- 2 tablespoons golden raisins
Instructions
- In a pan, heat ghee and roast the semolina until it turns golden and aromatic.
- In another pan, heat water, add saffron, and bring it to a boil.
- Slowly add the roasted semolina to the boiling water, stirring continuously to avoid lumps.
- Add sugar and mix well. Cook until the mixture thickens.
- Add cardamom powder, chopped nuts, and raisins. Mix well and cook for a few more minutes.
- Remove from heat and serve hot.
