Semporna Sambal Stingray

Ingredients

  • 4 stingray wings
  • 10 shallots
  • 5 cloves garlic
  • 10 dried red chilies
  • 2 lemongrass stalks
  • 1 inch galangal
  • 1 inch turmeric
  • 3 tablespoons tamarind paste
  • 2 tablespoons sugar
  • Salt to taste
  • 4 tablespoons cooking oil

Instructions

  1. Prepare the stingray wings by cleaning and scoring the flesh.
  2. Blend shallots, garlic, dried red chilies, lemongrass, galangal, and turmeric into a smooth paste.
  3. Heat oil in a pan and sauté the spice paste until fragrant.
  4. Add tamarind paste, sugar, and salt to the sambal. Cook until the oil separates.
  5. Grill the stingray wings over medium heat, basting with the sambal sauce until cooked through.
