Semporna Sambal Stingray

Ingredients
- 4 stingray wings
- 10 shallots
- 5 cloves garlic
- 10 dried red chilies
- 2 lemongrass stalks
- 1 inch galangal
- 1 inch turmeric
- 3 tablespoons tamarind paste
- 2 tablespoons sugar
- Salt to taste
- 4 tablespoons cooking oil
Instructions
- Prepare the stingray wings by cleaning and scoring the flesh.
- Blend shallots, garlic, dried red chilies, lemongrass, galangal, and turmeric into a smooth paste.
- Heat oil in a pan and sauté the spice paste until fragrant.
- Add tamarind paste, sugar, and salt to the sambal. Cook until the oil separates.
- Grill the stingray wings over medium heat, basting with the sambal sauce until cooked through.
