Semporna Seafood Tom Yam

Ingredients

  • 500g mixed seafood (prawns, squid, fish)
  • 4 cups chicken stock
  • 3 lemongrass stalks, smashed
  • 6 kaffir lime leaves
  • 4 shallots, sliced
  • 4 red chilies, sliced
  • 2 tomatoes, cut into wedges
  • 200g oyster mushrooms
  • 3 tbsp fish sauce
  • 3 tbsp lime juice
  • 2 tbsp palm sugar
  • 1/2 cup fresh coriander leaves

Instructions

  1. In a pot, bring the chicken stock to a boil.
  2. Add lemongrass, kaffir lime leaves, shallots, and chilies. Simmer for 5 minutes.
  3. Add seafood, tomatoes, and mushrooms. Cook for 3-4 minutes until seafood is cooked through.
  4. Stir in fish sauce, lime juice, and palm sugar. Simmer for another 2 minutes.
  5. Remove from heat and garnish with fresh coriander leaves before serving.
