Ingredients

  • 1 kg lamb, cut into chunks
  • 4 shallots, finely chopped
  • 4 cloves garlic, minced
  • 2 tomatoes, diced
  • 3 tablespoons sweet soy sauce (kecap manis)
  • 2 tablespoons tamarind paste
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 cinnamon stick
  • 3 cloves
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons oil
  • 500ml water

Instructions

  1. Heat the oil in a large pot over medium heat. Add the shallots and garlic, and sauté until fragrant.
  2. Add the lamb chunks to the pot and cook until browned on all sides.
  3. Stir in the tomatoes, sweet soy sauce, tamarind paste, ground coriander, ground cumin, cinnamon stick, cloves, bay leaves, salt, and pepper.
  4. Pour in the water and bring the stew to a boil. Reduce the heat to low, cover the pot, and simmer for about 2 hours, or until the lamb is tender.
  5. Adjust the seasoning if needed, and serve the Semur Kambing hot with steamed rice.
