Ingredients
- 1 kg lamb, cut into chunks
- 4 shallots, finely chopped
- 4 cloves garlic, minced
- 2 tomatoes, diced
- 3 tablespoons sweet soy sauce (kecap manis)
- 2 tablespoons tamarind paste
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 cinnamon stick
- 3 cloves
- 2 bay leaves
- Salt and pepper to taste
- 2 tablespoons oil
- 500ml water
Instructions
- Heat the oil in a large pot over medium heat. Add the shallots and garlic, and sauté until fragrant.
- Add the lamb chunks to the pot and cook until browned on all sides.
- Stir in the tomatoes, sweet soy sauce, tamarind paste, ground coriander, ground cumin, cinnamon stick, cloves, bay leaves, salt, and pepper.
- Pour in the water and bring the stew to a boil. Reduce the heat to low, cover the pot, and simmer for about 2 hours, or until the lamb is tender.
- Adjust the seasoning if needed, and serve the Semur Kambing hot with steamed rice.
