Ingredients
- 2 cups of mixed vegetables (carrots, potatoes, green beans, cabbage)
- 1 onion, sliced
- 3 cloves of garlic, minced
- 2 tablespoons of sweet soy sauce (kecap manis)
- 1 tablespoon of soy sauce
- 1 tablespoon of tamarind paste
- 1 teaspoon of ground coriander
- 1 teaspoon of ground cumin
- 1 teaspoon of brown sugar
- 4 cups of vegetable broth
- Salt and pepper to taste
- 2 tablespoons of cooking oil
Instructions
- In a large pot, heat the cooking oil over medium heat. Add the sliced onion and minced garlic. Sauté until fragrant.
- Add the mixed vegetables to the pot and stir for a few minutes.
- Pour in the vegetable broth, sweet soy sauce, soy sauce, tamarind paste, ground coriander, ground cumin, and brown sugar. Stir well to combine.
- Bring the stew to a boil, then reduce the heat and let it simmer for 30 minutes, or until the vegetables are tender.
- Season with salt and pepper to taste.
- Serve the Semur Sayur hot with steamed rice.
