Ingredients

  • 2 cups of mixed vegetables (carrots, potatoes, green beans, cabbage)

  • 3 cloves of garlic, minced
  • 2 tablespoons of sweet soy sauce (kecap manis)
  • 1 tablespoon of soy sauce
  • 1 tablespoon of tamarind paste
  • 1 teaspoon of ground coriander
  • 1 teaspoon of ground cumin
  • 1 teaspoon of brown sugar
  • 4 cups of vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons of cooking oil

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Add the sliced onion and minced garlic. Sauté until fragrant.
  2. Add the mixed vegetables to the pot and stir for a few minutes.
  3. Pour in the vegetable broth, sweet soy sauce, soy sauce, tamarind paste, ground coriander, ground cumin, and brown sugar. Stir well to combine.
  4. Bring the stew to a boil, then reduce the heat and let it simmer for 30 minutes, or until the vegetables are tender.
  5. Season with salt and pepper to taste.
