Senegalese Sensation (Thiébou Guinar Yapp)

Ingredients
- 2 cups of rice
- 1 whole fish, cleaned and scaled
- 1 onion, chopped
- 3 tomatoes, diced
- 1 eggplant, sliced
- 2 carrots, sliced
- 1 cabbage, chopped
- 1 scotch bonnet pepper, whole
- 1/4 cup of vegetable oil
- 1 tablespoon of tomato paste
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1 teaspoon of thyme
- 4 cups of water
Instructions
- Season the fish with salt and pepper, then set aside.
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onions and sauté until translucent.
- Stir in the tomato paste, diced tomatoes, and scotch bonnet pepper.
- Add the seasoned fish to the pot and cook for 5 minutes on each side.
- Remove the fish from the pot and set aside.
- Add the rice, carrots, eggplant, and cabbage to the pot.
- Pour in the water and season with salt, black pepper, and thyme.
- Place the fish on top of the rice and vegetables.
- Cover the pot and let it simmer for 30-40 minutes until the rice is cooked and the fish is tender.
- Serve hot and enjoy!
