Senegalese Serenade (Thiébou Guinar Lamb)
Thiébou Guinar Lamb, also known as Senegalese Serenade, is a flavorful and aromatic dish that is a staple in Senegalese cuisine. This traditional recipe features tender lamb, vibrant vegetables, and fragrant spices, all simmered together to create a mouthwatering one-pot meal.
Ingredients
- 2 lbs lamb, cut into pieces
- 2 cups rice
- 1 large onion, chopped
- 2 tomatoes, diced
- 1 eggplant, sliced
- 2 carrots, sliced
- 1/2 cabbage, chopped
- 4 cups water
- 1/4 cup vegetable oil
- 1/4 cup tomato paste
- 1 tsp ground red pepper
- 1 tsp garlic powder
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until translucent.
- Add the lamb pieces to the pot and brown on all sides.
- Stir in the tomato paste, ground red pepper, garlic powder, thyme, salt, and black pepper. Cook for 5 minutes.
- Add the diced tomatoes and cook for another 5 minutes.
- Pour in the water and bring to a boil. Reduce the heat to low and let it simmer for 30 minutes.
- Add the rice, eggplant, carrots, and cabbage to the pot. Cover and cook for an additional 20 minutes, or until the rice is tender and the lamb is cooked through.
- Once done, remove from heat and let it rest for 5 minutes before serving.
