Senegalese Serenade (Thiébou Guinar Lamb)

Ingredients

  • 2 lbs lamb, cut into pieces
  • 2 cups rice
  • 1 large onion, chopped
  • 2 tomatoes, diced
  • 1 eggplant, sliced
  • 2 carrots, sliced
  • 1/2 cabbage, chopped
  • 4 cups water
  • 1/4 cup vegetable oil
  • 1/4 cup tomato paste
  • 1 tsp ground red pepper
  • 1 tsp garlic powder
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until translucent.
  2. Add the lamb pieces to the pot and brown on all sides.
  3. Stir in the tomato paste, ground red pepper, garlic powder, thyme, salt, and black pepper. Cook for 5 minutes.
  4. Add the diced tomatoes and cook for another 5 minutes.
  5. Pour in the water and bring to a boil. Reduce the heat to low and let it simmer for 30 minutes.
  6. Add the rice, eggplant, carrots, and cabbage to the pot. Cover and cook for an additional 20 minutes, or until the rice is tender and the lamb is cooked through.
  7. Once done, remove from heat and let it rest for 5 minutes before serving.
