Senegalese Soul (Thiébou Guerte Lamb)

Ingredients

  • 2 lbs lamb, cut into chunks
  • 2 cups rice
  • 1 large onion, chopped
  • 3 tomatoes, diced
  • 2 carrots, sliced
  • 1 eggplant, diced
  • 1/2 cup cabbage, shredded
  • 4 cups water
  • 1/4 cup vegetable oil
  • 1 scotch bonnet pepper, whole
  • 1/2 cup tomato paste
  • 1 tsp thyme
  • 1 tsp black pepper
  • 1 tsp salt

Instructions

  1. Season the lamb with salt, pepper, and thyme.
  2. In a large pot, heat the vegetable oil over medium heat and brown the lamb.
  3. Add the onions, tomatoes, and tomato paste to the pot and cook for 5 minutes.
  4. Add the water, scotch bonnet pepper, carrots, eggplant, and cabbage to the pot and bring to a boil.
  5. Reduce the heat, cover, and simmer for 30 minutes.
  6. Add the rice to the pot, cover, and cook for an additional 20 minutes or until the rice is tender.
  7. Remove the scotch bonnet pepper before serving.
