Ingredients
- 2 lbs lamb, cut into chunks
- 2 cups rice
- 1 large onion, chopped
- 3 tomatoes, diced
- 2 carrots, sliced
- 1 eggplant, diced
- 1/2 cup cabbage, shredded
- 4 cups water
- 1/4 cup vegetable oil
- 1 scotch bonnet pepper, whole
- 1/2 cup tomato paste
- 1 tsp thyme
- 1 tsp black pepper
- 1 tsp salt
Instructions
- Season the lamb with salt, pepper, and thyme.
- In a large pot, heat the vegetable oil over medium heat and brown the lamb.
- Add the onions, tomatoes, and tomato paste to the pot and cook for 5 minutes.
- Add the water, scotch bonnet pepper, carrots, eggplant, and cabbage to the pot and bring to a boil.
- Reduce the heat, cover, and simmer for 30 minutes.
- Add the rice to the pot, cover, and cook for an additional 20 minutes or until the rice is tender.
- Remove the scotch bonnet pepper before serving.
