Senegalese Sunrise (Thiébou Tchep Yapp)

Ingredients

  • 2 lbs lamb or beef, cut into chunks
  • 2 cups rice
  • 1 onion, chopped
  • 3 tomatoes, diced
  • 1 eggplant, sliced
  • 2 carrots, sliced
  • 1 cabbage, cut into wedges
  • 4 cups water
  • 1/4 cup vegetable oil
  • 1/4 cup tomato paste
  • 1 scotch bonnet pepper, whole
  • 1 tsp thyme
  • 1 tsp ground ginger
  • 1 tsp ground black pepper
  • Salt to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and cook until softened.
  2. Add the lamb or beef chunks to the pot and brown on all sides.
  3. Stir in the tomato paste, thyme, ginger, black pepper, and salt. Cook for 5 minutes.
  4. Add the water, tomatoes, eggplant, carrots, cabbage, and scotch bonnet pepper to the pot. Bring to a boil, then reduce the heat and simmer for 30 minutes.
  5. Stir in the rice and continue to cook for another 20-25 minutes, or until the rice is tender and the meat is cooked through.
  6. Remove the scotch bonnet pepper before serving. Serve the Thiébou Tchep Yapp hot and enjoy!
