Senegalese Sunrise (Thiébou Tchep Yapp)
Thiébou Tchep Yapp, also known as Senegalese Sunrise, is a flavorful and aromatic dish that is a staple in Senegalese cuisine. This dish features marinated lamb or beef cooked with rice, vegetables, and a variety of spices, creating a delicious and satisfying meal.
Ingredients
- 2 lbs lamb or beef, cut into chunks
- 2 cups rice
- 1 onion, chopped
- 3 tomatoes, diced
- 1 eggplant, sliced
- 2 carrots, sliced
- 1 cabbage, cut into wedges
- 4 cups water
- 1/4 cup vegetable oil
- 1/4 cup tomato paste
- 1 scotch bonnet pepper, whole
- 1 tsp thyme
- 1 tsp ground ginger
- 1 tsp ground black pepper
- Salt to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and cook until softened.
- Add the lamb or beef chunks to the pot and brown on all sides.
- Stir in the tomato paste, thyme, ginger, black pepper, and salt. Cook for 5 minutes.
- Add the water, tomatoes, eggplant, carrots, cabbage, and scotch bonnet pepper to the pot. Bring to a boil, then reduce the heat and simmer for 30 minutes.
- Stir in the rice and continue to cook for another 20-25 minutes, or until the rice is tender and the meat is cooked through.
- Remove the scotch bonnet pepper before serving. Serve the Thiébou Tchep Yapp hot and enjoy!
