Ingredients
- 1 whole fish, cleaned and scaled
- 2 cups rice
- 2 onions, sliced
- 3 tomatoes, diced
- 1 eggplant, sliced
- 2 carrots, sliced
- 1 cabbage, cut into wedges
- 1 cup tomato paste
- 4 cups water
- 1 scotch bonnet pepper, whole
- 1/4 cup vegetable oil
- Salt and pepper to taste
Instructions
- Season the fish with salt and pepper, then set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the onions and cook until softened.
- Add the tomato paste and diced tomatoes to the pot, stirring to combine.
- Place the seasoned fish on top of the tomato mixture in the pot.
- Add the water and scotch bonnet pepper to the pot, then bring to a simmer. Cook for 20 minutes.
- Add the rice, eggplant, carrots, and cabbage to the pot, arranging them around the fish.
- Cover the pot and let the ingredients cook for an additional 30-40 minutes, or until the rice is tender and the fish is fully cooked.
- Once cooked, carefully remove the fish from the pot and set aside.
- Fluff the rice and vegetables with a fork, then transfer to a serving platter.
- Place the cooked fish on top of the rice and vegetables, then serve hot.
