Senegal's Secret (Thiébou Guerte Tiga)

Ingredients

  • 2 lbs fish (such as red snapper or grouper)
  • 2 cups rice
  • 2 onions, chopped
  • 4 tomatoes, diced
  • 2 carrots, sliced
  • 2 eggplants, diced
  • 2 hot peppers, chopped
  • 1/4 cup tomato paste
  • 1/4 cup vegetable oil
  • 4 cups water
  • Salt and pepper to taste

Instructions

  1. Season the fish with salt and pepper, then set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the onions and cook until softened.
  3. Add the tomatoes, carrots, eggplants, and hot peppers to the pot. Cook for 5 minutes, stirring occasionally.
  4. Stir in the tomato paste and cook for an additional 3 minutes.
  5. Add the seasoned fish to the pot and pour in the water. Bring to a boil, then reduce the heat and let it simmer for 20 minutes.
  6. Stir in the rice and season with more salt and pepper. Cover the pot and let it cook for 20-25 minutes, or until the rice is tender and the fish is fully cooked.
  7. Once done, remove from heat and let it sit for 5 minutes before serving.
