Senegal's Secret (Thiébou Guerte Tiga)
Thiébou Guerte Tiga, also known as Senegal's Secret, is a flavorful and aromatic dish that is a staple in Senegalese cuisine. This traditional dish features fish, rice, and a variety of vegetables, all cooked together to create a delicious one-pot meal.
Ingredients
- 2 lbs fish (such as red snapper or grouper)
- 2 cups rice
- 2 onions, chopped
- 4 tomatoes, diced
- 2 carrots, sliced
- 2 eggplants, diced
- 2 hot peppers, chopped
- 1/4 cup tomato paste
- 1/4 cup vegetable oil
- 4 cups water
- Salt and pepper to taste
Instructions
- Season the fish with salt and pepper, then set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the onions and cook until softened.
- Add the tomatoes, carrots, eggplants, and hot peppers to the pot. Cook for 5 minutes, stirring occasionally.
- Stir in the tomato paste and cook for an additional 3 minutes.
- Add the seasoned fish to the pot and pour in the water. Bring to a boil, then reduce the heat and let it simmer for 20 minutes.
- Stir in the rice and season with more salt and pepper. Cover the pot and let it cook for 20-25 minutes, or until the rice is tender and the fish is fully cooked.
- Once done, remove from heat and let it sit for 5 minutes before serving.
