Instructions

  1. In a bowl, mix the all-purpose flour, coconut milk, granulated sugar, and salt until smooth.
  2. Heat a non-stick pan over medium heat and pour a ladle of the batter onto the pan. Cook until the edges are set and the bottom is golden brown. Flip and cook the other side until golden brown. Repeat with the remaining batter.
  3. In a saucepan, combine the palm sugar and water. Cook over medium heat until the sugar is completely dissolved and the syrup thickens slightly.
  4. To serve, place a few slices of jackfruit on top of each pancake and drizzle with the palm sugar syrup.
