Serbian Spinach Pie (Pita sa Spanaćem)

Ingredients

  • 1 package of phyllo dough
  • 2 pounds of fresh spinach, chopped
  • 1 onion, finely chopped
  • 3 eggs
  • 1 cup of crumbled feta cheese
  • 1 cup of ricotta cheese
  • 1/2 cup of melted butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the chopped spinach, onion, eggs, feta cheese, and ricotta cheese. Season with salt and pepper.
  3. Layer 6 sheets of phyllo dough in a greased baking dish, brushing each sheet with melted butter.
  4. Spread the spinach and cheese mixture over the phyllo dough.
  5. Layer another 6 sheets of phyllo dough on top of the spinach mixture, brushing each sheet with melted butter.
  6. Score the top of the pie into squares or triangles with a sharp knife.
  7. Bake in the preheated oven for 45 minutes, or until the pita is golden brown and crispy.
  8. Let it cool for a few minutes before slicing and serving.
