Serenade of Spices (Sérénade des épices)

Ingredients

  • 4 boneless chicken breasts
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Season the chicken breasts with salt, pepper, paprika, cayenne pepper, cumin, and coriander.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped onion and garlic. Cook for 2-3 minutes until softened.
  4. Pour in the chicken broth and bring to a simmer. Allow the broth to reduce by half.
  5. Stir in the heavy cream and return the chicken breasts to the skillet. Simmer for an additional 5 minutes until the sauce has thickened.
  6. Sprinkle with chopped parsley before serving.
