Ingredients
- 4 boneless chicken breasts
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- Salt and pepper to taste
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tablespoons chopped fresh parsley
Instructions
- Season the chicken breasts with salt, pepper, paprika, cayenne pepper, cumin, and coriander.
- Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and garlic. Cook for 2-3 minutes until softened.
- Pour in the chicken broth and bring to a simmer. Allow the broth to reduce by half.
- Stir in the heavy cream and return the chicken breasts to the skillet. Simmer for an additional 5 minutes until the sauce has thickened.
- Sprinkle with chopped parsley before serving.
