Ingredients
- 2 large sweet potatoes, peeled and cubed
- 1 can (14 oz) coconut milk
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 cup vegetable broth
- 2 tbsp red curry paste
- 1 tbsp soy sauce
- 1 tbsp coconut sugar
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until fragrant.
- Add the red curry paste to the pot and stir to combine with the onions and garlic.
- Pour in the coconut milk and vegetable broth, then add the cubed sweet potatoes and sliced red bell pepper. Stir well.
- Season with soy sauce, coconut sugar, salt, and pepper. Cover the pot and let the curry simmer for 20-25 minutes, or until the sweet potatoes are tender.
