Serobe Samosas

Ingredients

  • 500g tripe, cleaned and diced
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp chili powder
  • 1/2 cup frozen peas
  • Salt and pepper to taste
  • 12 sheets of phyllo pastry
  • 1/4 cup melted butter

Instructions

  1. In a large pan, cook the tripe over medium heat until browned. Add the onion, tomatoes, and garlic, and cook until the vegetables are softened.
  2. Stir in the cumin, coriander, and chili powder. Add the frozen peas and cook for an additional 5 minutes. Season with salt and pepper to taste.
  3. Preheat the oven to 375°F (190°C). Lay out one sheet of phyllo pastry and brush with melted butter. Place a spoonful of the tripe filling at the bottom of the sheet, then fold the bottom corner over the filling to form a triangle. Continue folding the triangle up the pastry sheet until the entire sheet is wrapped around the filling. Repeat with the remaining pastry sheets and filling.
  4. Place the samosas on a baking sheet and brush the tops with additional melted butter. Bake for 20-25 minutes, or until the pastry is golden and crispy.
  5. Serve the serobe samosas hot, with your choice of dipping sauce or chutney.
