Ingredients

  • 1 kg tripe, cleaned and cut into small pieces
  • 2 onions, finely chopped
  • 2 tomatoes, diced
  • 2 tablespoons vegetable oil
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onions and sauté until golden brown.
  3. Add the diced tomatoes and cook until they soften.
  4. Add the tripe pieces to the pot and stir to combine with the onions and tomatoes.
  5. Season with ground coriander, ground cumin, salt, and pepper. Stir well to coat the tripe with the spices.
  6. Reduce the heat to low, cover the pot, and simmer for 2 hours, stirring occasionally, until the tripe is tender.
  7. Once the tripe is tender, remove from heat and let it rest for a few minutes before serving.
