Ingredients

  • 1 kg tripe, cleaned and cut into cubes
  • 2 onions, chopped
  • 2 tomatoes, diced
  • 1/4 cup vegetable oil
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • Salt and pepper to taste

Instructions

  1. Place the tripe cubes in a bowl and add the chopped onions, diced tomatoes, vegetable oil, paprika, ground coriander, salt, and pepper. Mix well to coat the tripe with the seasonings.
  2. Thread the marinated tripe cubes onto skewers, alternating with pieces of onion and tomato.
  3. Preheat the grill to medium-high heat and lightly oil the grate.
  4. Grill the skewers for about 15 minutes, turning occasionally, until the tripe is cooked through and has a nice char.
  5. Remove the skewers from the grill and serve hot.
