Serobe Sliders

Ingredients
- 1 kg tripe, cleaned and cut into small pieces
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/4 cup vinegar
- 1/4 cup water
- 1 tsp salt
- 1/2 tsp pepper
- 12 mini burger buns
Instructions
- In a large pot, combine the tripe, onion, tomatoes, vinegar, water, salt, and pepper.
- Cover and cook over medium heat for 1 hour, or until the tripe is tender.
- Once cooked, remove the lid and continue to cook until the liquid has evaporated.
- Assemble the sliders by placing a spoonful of the tripe mixture onto each mini burger bun.
- Serve and enjoy!
