Ingredients

  • 1 kg tripe, cleaned and cut into small pieces
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/4 cup vinegar
  • 1/4 cup water
  • 1 tsp salt
  • 1/2 tsp pepper
  • 12 mini burger buns

Instructions

  1. In a large pot, combine the tripe, onion, tomatoes, vinegar, water, salt, and pepper.
  2. Cover and cook over medium heat for 1 hour, or until the tripe is tender.
  3. Once cooked, remove the lid and continue to cook until the liquid has evaporated.
  4. Assemble the sliders by placing a spoonful of the tripe mixture onto each mini burger bun.
  5. Serve and enjoy!
