Serobe Stir-fry

Ingredients
- 500g tripe, cleaned and cut into strips
- 500g beef or goat intestines, cleaned and cut into pieces
- 2 onions, sliced
- 3 tomatoes, chopped
- 2 green bell peppers, sliced
- 2 tablespoons vegetable oil
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the tripe and intestines to the pan and cook for 15-20 minutes, stirring occasionally, until browned and cooked through.
- Add the onions, tomatoes, and green bell peppers to the pan. Cook for an additional 10 minutes, stirring frequently.
- Season the stir-fry with paprika, ground coriander, ground cumin, salt, and pepper. Stir well to combine.
- Continue to cook for another 5-10 minutes, or until the vegetables are tender and the flavors have melded together.
- Remove from heat and serve hot.
