Serobe Stir-fry

Ingredients

  • 500g tripe, cleaned and cut into strips
  • 500g beef or goat intestines, cleaned and cut into pieces
  • 2 onions, sliced
  • 3 tomatoes, chopped
  • 2 green bell peppers, sliced
  • 2 tablespoons vegetable oil
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the tripe and intestines to the pan and cook for 15-20 minutes, stirring occasionally, until browned and cooked through.
  3. Add the onions, tomatoes, and green bell peppers to the pan. Cook for an additional 10 minutes, stirring frequently.
  4. Season the stir-fry with paprika, ground coriander, ground cumin, salt, and pepper. Stir well to combine.
  5. Continue to cook for another 5-10 minutes, or until the vegetables are tender and the flavors have melded together.
  6. Remove from heat and serve hot.
