Serunding Surprise
Serunding Surprise is a traditional Malay dish made with spiced meat floss, coconut, and aromatic spices. It's a popular dish during festive seasons and special occasions.
Ingredients
- 500g cooked chicken, shredded
- 1 cup grated coconut
- 4 shallots, finely sliced
- 2 cloves garlic, minced
- 2 lemongrass stalks, sliced
- 1 inch galangal, sliced
- 5 kaffir lime leaves, finely chopped
- 3 red chilies, sliced
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp salt
- 1/2 tsp sugar
- 1/2 cup coconut milk
Instructions
- In a pan, dry roast the grated coconut until golden brown. Set aside.
- Heat some oil in a pan and sauté the shallots, garlic, lemongrass, and galangal until fragrant.
- Add the shredded chicken, turmeric powder, coriander powder, cumin powder, salt, and sugar. Cook for 5 minutes.
- Pour in the coconut milk and simmer until the mixture is dry.
- Add the roasted coconut, kaffir lime leaves, and red chilies. Stir well and cook for another 5 minutes.
- Remove from heat and let it cool.
- Serve the serunding with steamed rice or as a filling for sandwiches.
