Ingredients

  • 500g cooked chicken, shredded
  • 1 cup grated coconut
  • 4 shallots, finely sliced
  • 2 cloves garlic, minced
  • 2 lemongrass stalks, sliced
  • 1 inch galangal, sliced
  • 5 kaffir lime leaves, finely chopped
  • 3 red chilies, sliced
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1/2 cup coconut milk

Instructions

  1. In a pan, dry roast the grated coconut until golden brown. Set aside.
  2. Heat some oil in a pan and sauté the shallots, garlic, lemongrass, and galangal until fragrant.
  3. Add the shredded chicken, turmeric powder, coriander powder, cumin powder, salt, and sugar. Cook for 5 minutes.
  4. Pour in the coconut milk and simmer until the mixture is dry.
  5. Add the roasted coconut, kaffir lime leaves, and red chilies. Stir well and cook for another 5 minutes.
  6. Remove from heat and let it cool.
  7. Serve the serunding with steamed rice or as a filling for sandwiches.
