Ingredients

  • 1/2 pound mussels, cleaned
  • 1/2 pound clams, cleaned
  • 1/2 pound large shrimp, peeled and deveined
  • 1/2 pound squid, cleaned and sliced into rings
  • 1/2 cup frozen peas
  • 1 lemon, cut into wedges
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a paella pan, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until the vegetables are softened.
  2. Add the grated tomato and saffron threads. Cook for 2-3 minutes.
  3. Stir in the rice and cook for 1 minute, stirring constantly.
  4. Pour in the fish or seafood stock. Bring to a boil, then reduce the heat to low. Simmer for 15 minutes without stirring.
  5. Add the mussels, clams, shrimp, and squid to the pan. Cook for an additional 5-7 minutes or until the seafood is cooked through.
  6. Scatter the frozen peas over the paella and cook for 2 more minutes.
  7. Season with salt and pepper. Remove from heat and let it rest for 5 minutes before serving.
  8. Serve with lemon wedges on the side.
