Ingredients
- 1 cup bomba or calasparra rice
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 tomato, grated
- 1/2 teaspoon saffron threads
- 4 cups fish or seafood stock
- 1/2 pound mussels, cleaned
- 1/2 pound clams, cleaned
- 1/2 pound large shrimp, peeled and deveined
- 1/2 pound squid, cleaned and sliced into rings
- 1/2 cup frozen peas
- 1 lemon, cut into wedges
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a paella pan, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until the vegetables are softened.
- Add the grated tomato and saffron threads. Cook for 2-3 minutes.
- Stir in the rice and cook for 1 minute, stirring constantly.
- Pour in the fish or seafood stock. Bring to a boil, then reduce the heat to low. Simmer for 15 minutes without stirring.
- Add the mussels, clams, shrimp, and squid to the pan. Cook for an additional 5-7 minutes or until the seafood is cooked through.
- Scatter the frozen peas over the paella and cook for 2 more minutes.
- Season with salt and pepper. Remove from heat and let it rest for 5 minutes before serving.
- Serve with lemon wedges on the side.
