Sesame Ginger Soba Salad (Goma Shōga Soba Sarada)

Ingredients

  • 8 oz soba noodles
  • 1/4 cup soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 1 tbsp grated ginger
  • 1 tbsp honey
  • 1 cup shredded carrots
  • 1/2 cup sliced cucumber
  • 1/4 cup chopped scallions
  • 1/4 cup toasted sesame seeds

Instructions

  1. Cook the soba noodles according to the package instructions. Drain and rinse with cold water.
  2. In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, grated ginger, and honey to make the dressing.
