Sesame Seed Brittle, also known as Til Gajak, is a traditional sweet treat from Jharkhandi Cuisine. It is made with just a few simple ingredients and is perfect for satisfying your sweet tooth.

Sesame Seed Brittle (til Gajak)

Ingredients

  • 1 cup sesame seeds
  • 1 cup jaggery (gur)
  • 1/4 teaspoon cardamom powder
  • 1 tablespoon ghee (clarified butter)

Instructions

  1. In a heavy-bottomed pan, dry roast the sesame seeds over medium heat until they turn golden brown. Remove from the pan and set aside.
  2. In the same pan, heat the ghee and add the jaggery. Cook until the jaggery melts and forms a thick syrup.
  3. Add the roasted sesame seeds and cardamom powder to the jaggery syrup. Mix well to combine.
  4. Pour the mixture onto a greased plate and spread it evenly with a greased rolling pin.
  5. Let it cool and set for about 10 minutes, then cut into pieces.
