Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup cooked seswaa, shredded
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold butter to the dry ingredients and use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
  4. Stir in the shredded seswaa.
  5. In a separate bowl, mix the buttermilk and vanilla extract.
  6. Pour the buttermilk mixture into the dry ingredients and stir until just combined.
  7. Turn the dough out onto a floured surface and gently knead it a few times until it comes together.
  8. Pat the dough into a circle about 1 inch thick, then use a sharp knife to cut it into 8 wedges.
  9. Place the scones on the prepared baking sheet and bake for 15-18 minutes, or until golden brown.
  10. Allow the scones to cool slightly before serving.
