Seswaa Sushi is a unique fusion dish that combines the traditional Botswana dish of seswaa with the popular Japanese cuisine of sushi. This creative recipe brings together the rich flavors of slow-cooked beef with the delicate textures of sushi rice, creating a delightful culinary experience.

Seswaa Sushi

Ingredients

  • 2 lbs beef brisket
  • 2 onions, chopped
  • 4 cups water
  • 2 cups sushi rice
  • 1/2 cup rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • Nori seaweed sheets
  • Soy sauce, for serving
  • Wasabi, for serving
  • Pickled ginger, for serving

Instructions

  1. In a large pot, combine the beef brisket, chopped onions, and water. Bring to a boil, then reduce heat and simmer for 4 hours, or until the beef is tender.
  2. While the beef is cooking, prepare the sushi rice according to package instructions. In a small bowl, mix the rice vinegar, sugar, and salt. Once the rice is cooked, gently fold in the vinegar mixture and let it cool.
  3. Once the beef is tender, remove it from the pot and shred it using two forks.
  4. To assemble the seswaa sushi, place a sheet of nori on a bamboo sushi mat. Spread a thin layer of sushi rice over the nori, leaving a small border along the edges. Place a line of shredded beef in the center of the rice. Roll the sushi tightly using the bamboo mat.
  5. Cut the seswaa sushi roll into bite-sized pieces and serve with soy sauce, wasabi, and pickled ginger.
