Sev Usal
Sev Usal is a popular street food from the Indian state of Gujarat. It is a spicy and tangy curry made with dried peas and topped with crispy sev.
Ingredients
- 1 cup dried white peas
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 1 green chili, finely chopped
- 1 teaspoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- 1/2 cup sev (crispy chickpea noodles)
- Fresh coriander leaves for garnish
Instructions
- Soak the dried white peas in water for 6-8 hours or overnight.
- Pressure cook the soaked peas with salt until soft.
- Heat oil in a pan and sauté the onions until golden brown.
- Add the green chili, ginger-garlic paste, and tomatoes. Cook until the tomatoes are soft.
- Add turmeric powder, red chili powder, garam masala, and salt. Mix well.
- Add the cooked peas along with some water. Simmer for 5-7 minutes.
- Divide the usal into serving bowls and top with sev and fresh coriander leaves.
