Seychelles Octopus Curry

Ingredients

  • 2 lbs octopus, cleaned and cut into pieces
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 tomatoes, chopped
  • 1 can coconut milk
  • 2 tbsp curry powder
  • 1 tsp turmeric powder
  • 1 tsp cumin seeds
  • 2 green chilies, sliced
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  2. Add the tomatoes, curry powder, turmeric, cumin seeds, and green chilies. Cook for a few minutes until the tomatoes are soft.
  3. Add the octopus pieces to the pot and stir well to coat them with the spices.
  4. Pour in the coconut milk and season with salt. Bring to a simmer, then reduce the heat and cover the pot. Let it cook for about 1 hour, or until the octopus is tender.
  5. Garnish with fresh coriander leaves before serving.
