Seychelles Seafood Bouillabaisse

Ingredients

  • 1 lb mixed seafood (shrimp, fish, mussels)
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 4 cups seafood or fish stock
  • 1/2 cup white wine
  • 1 tsp saffron threads
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Pour in the diced tomatoes, seafood or fish stock, white wine, saffron threads, bay leaves, and dried thyme. Season with salt and pepper, then bring the mixture to a simmer.
  3. Add the mixed seafood to the pot and cook for about 10-15 minutes, or until the seafood is fully cooked.
  4. Remove the bay leaves from the pot and discard. Taste the broth and adjust the seasoning if needed.
  5. Serve the Seychelles Seafood Bouillabaisse hot, garnished with chopped fresh parsley.
