Ingredients
- 1 lb mixed seafood (shrimp, fish, mussels)
- 2 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 4 cups seafood or fish stock
- 1/2 cup white wine
- 1 tsp saffron threads
- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Pour in the diced tomatoes, seafood or fish stock, white wine, saffron threads, bay leaves, and dried thyme. Season with salt and pepper, then bring the mixture to a simmer.
- Add the mixed seafood to the pot and cook for about 10-15 minutes, or until the seafood is fully cooked.
- Remove the bay leaves from the pot and discard. Taste the broth and adjust the seasoning if needed.
- Serve the Seychelles Seafood Bouillabaisse hot, garnished with chopped fresh parsley.
