Ingredients
- 2 lbs fresh mussels, cleaned and debearded
- 1 tbsp vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red chili, finely chopped
- 2 tbsp curry powder
- 1 can (14 oz) coconut milk
- 1/2 cup vegetable broth
- 2 tbsp fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and red chili. Cook until the onion is soft and translucent.
- Stir in the curry powder and cook for 1-2 minutes to toast the spices.
- Pour in the coconut milk and vegetable broth. Bring the mixture to a simmer.
- Add the cleaned mussels to the pot and cover with a lid. Cook for 5-7 minutes or until the mussels have opened.
- Discard any unopened mussels. Season the coconut curry broth with salt and pepper to taste.
- Sprinkle the chopped cilantro over the mussels before serving.
