Ingredients
- 1 cup rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 cup cherry tomatoes
- 1 cup green beans, trimmed
- 1 cup seafood stock
- 1/2 teaspoon saffron threads
- 1/2 lb shrimp, peeled and deveined
- 1/2 lb mussels, cleaned and debearded
- 1/2 lb squid, sliced into rings
- 1 lemon, cut into wedges
Instructions
- In a paella pan, heat some olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the red bell pepper, cherry tomatoes, and green beans. Cook for a few minutes until the vegetables start to soften.
- Stir in the rice, seafood stock, and saffron threads. Bring to a simmer and cook for about 15 minutes.
- Add the shrimp, mussels, and squid to the pan. Cover and cook for another 10-15 minutes, or until the seafood is cooked through and the rice is tender.
- Remove from heat and let it rest for a few minutes. Serve with lemon wedges.
