Ingredients

  • 1 cup rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup cherry tomatoes
  • 1 cup green beans, trimmed
  • 1 cup seafood stock
  • 1/2 teaspoon saffron threads
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb mussels, cleaned and debearded
  • 1/2 lb squid, sliced into rings
  • 1 lemon, cut into wedges

Instructions

  1. In a paella pan, heat some olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the red bell pepper, cherry tomatoes, and green beans. Cook for a few minutes until the vegetables start to soften.
  3. Stir in the rice, seafood stock, and saffron threads. Bring to a simmer and cook for about 15 minutes.
  4. Add the shrimp, mussels, and squid to the pan. Cover and cook for another 10-15 minutes, or until the seafood is cooked through and the rice is tender.
  5. Remove from heat and let it rest for a few minutes. Serve with lemon wedges.
