Ingredients
- 500g pork lungs, cleaned and sliced
- 3 slices ginger
- 2 green onions, cut into 2-inch pieces
- 2 tablespoons Shaoxing wine
- 3 tablespoons soy sauce
- 1 tablespoon dark soy sauce
- 1 tablespoon sugar
- 1 star anise
- 1 cinnamon stick
- 2 cups water
Instructions
- Blanch the pork lungs in boiling water for 5 minutes, then rinse under cold water and drain.
- Heat a wok or large pot over medium heat, add the ginger and green onions, and stir-fry for 1-2 minutes until fragrant.
- Add the pork lungs and Shaoxing wine, and cook for 2-3 minutes.
- Stir in the soy sauce, dark soy sauce, and sugar, then add the star anise, cinnamon stick, and water.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 2 hours until the pork lungs are tender.
- Uncover and continue to simmer for an additional 20-30 minutes until the sauce thickens.
- Remove the star anise and cinnamon stick before serving.
