Ingredients

  • 500g pork lungs, cleaned and sliced
  • 3 slices ginger

  • 2 tablespoons Shaoxing wine
  • 3 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon sugar
  • 1 star anise
  • 1 cinnamon stick
  • 2 cups water

Instructions

  1. Blanch the pork lungs in boiling water for 5 minutes, then rinse under cold water and drain.
  2. Heat a wok or large pot over medium heat, add the ginger and green onions, and stir-fry for 1-2 minutes until fragrant.
  3. Add the pork lungs and Shaoxing wine, and cook for 2-3 minutes.
  4. Stir in the soy sauce, dark soy sauce, and sugar, then add the star anise, cinnamon stick, and water.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 2 hours until the pork lungs are tender.
  6. Uncover and continue to simmer for an additional 20-30 minutes until the sauce thickens.
  7. Remove the star anise and cinnamon stick before serving.
