Shaanxi Hong Shao Pai Gu, also known as Shaanxi Style Stewed Pork Ribs, is a classic dish from Shaanxi Cuisine known for its rich and savory flavors.
Ingredients
- 1.5 kg pork ribs
- 3 slices ginger
- 3 cloves garlic, minced
- 3 green onions, cut into 2-inch pieces
- 1/2 cup soy sauce
- 1/4 cup dark soy sauce
- 1/4 cup Shaoxing wine
- 2 tbsp sugar
- 1 star anise
- 1 cinnamon stick
- 3 cups water
Instructions
- Blanch the pork ribs in boiling water for 5 minutes, then rinse and drain.
- Heat some oil in a pot and sauté the ginger, garlic, and green onions until fragrant.
- Add the pork ribs and brown them slightly.
- Pour in the soy sauce, dark soy sauce, and Shaoxing wine. Add sugar, star anise, and cinnamon stick.
- Pour in the water and bring to a boil. Then reduce heat, cover, and simmer for 1.5 to 2 hours until the pork is tender.
- Uncover the pot and continue to simmer until the sauce thickens.
- Serve the Shaanxi Hong Shao Pai Gu hot with steamed rice.
