Shaanxi Hong Shao Pai Gu (shaanxi Style Stewed Pork Ribs)

Ingredients

  • 1.5 kg pork ribs
  • 3 slices ginger
  • 3 cloves garlic, minced
  • 3 green onions, cut into 2-inch pieces
  • 1/2 cup soy sauce
  • 1/4 cup dark soy sauce
  • 1/4 cup Shaoxing wine
  • 2 tbsp sugar
  • 1 star anise
  • 1 cinnamon stick
  • 3 cups water

Instructions

  1. Blanch the pork ribs in boiling water for 5 minutes, then rinse and drain.
  2. Heat some oil in a pot and sauté the ginger, garlic, and green onions until fragrant.
  3. Add the pork ribs and brown them slightly.
  4. Pour in the soy sauce, dark soy sauce, and Shaoxing wine. Add sugar, star anise, and cinnamon stick.
  5. Pour in the water and bring to a boil. Then reduce heat, cover, and simmer for 1.5 to 2 hours until the pork is tender.
  6. Uncover the pot and continue to simmer until the sauce thickens.
  7. Serve the Shaanxi Hong Shao Pai Gu hot with steamed rice.
