Ingredients
- 1 lb chicken thighs, cut into bite-sized pieces
- 1 cup cornstarch
- 1/4 cup Sichuan peppercorns
- 1/4 cup dried red chilies
- 3 cloves garlic, minced
- 2 green onions, chopped
- 1 tablespoon ginger, minced
- 3 tablespoons soy sauce
- 2 tablespoons Chinese black vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1/2 cup vegetable oil for frying
Instructions
- Place the chicken pieces in a bowl and coat them with cornstarch.
- Heat the vegetable oil in a wok or large skillet over medium-high heat. Fry the chicken pieces until they are golden and crispy. Remove and set aside.
- In the same wok, add Sichuan peppercorns, dried red chilies, garlic, and ginger. Stir-fry until fragrant.
- Return the fried chicken to the wok. Add soy sauce, Chinese black vinegar, sugar, and salt. Stir-fry until the chicken is evenly coated with the spicy seasoning.
- Garnish with chopped green onions and serve hot.
