Ingredients

  • 1 whole chicken, about 3 lbs
  • 3 slices ginger

  • 2 tbsp Chinese black vinegar
  • 1 tbsp sugar
  • 1 tsp sesame oil
  • 1/2 tsp salt
  • 1/4 tsp ground Sichuan peppercorns
  • 1/4 cup chicken broth

Instructions

  1. Place the chicken in a steamer basket with ginger and green onions. Steam for about 30 minutes until the chicken is cooked through.
  2. Remove the chicken from the steamer and let it cool. Then, cut the chicken into bite-sized pieces.
  3. In a bowl, mix soy sauce, Chinese black vinegar, sugar, sesame oil, salt, ground Sichuan peppercorns, and chicken broth to make the sauce.
  4. Pour the sauce over the steamed chicken pieces and toss to coat evenly.
  5. Refrigerate the Shaanxi Liang Ban Ji for at least 2 hours before serving.
