Shaanxi Liang Pi (shaanxi Spicy Cold Noodles)
Shaanxi Liang Pi, also known as Shaanxi Spicy Cold Noodles, is a popular dish from Shaanxi Cuisine. It features chewy, translucent noodles topped with a spicy and tangy sauce, making it a refreshing and flavorful meal, especially during hot summer days.
Ingredients
- 10 oz (300g) wheat starch noodles
- 1 cucumber, julienned
- 2 carrots, julienned
- 1/4 cup (60ml) soy sauce
- 2 tbsp (30ml) Chinkiang vinegar
- 2 tbsp (30ml) chili oil
- 1 tbsp (15g) sugar
- 1 tsp (5g) Sichuan peppercorn powder
- 2 cloves garlic, minced
- 1 green onion, finely chopped
- 1/4 cup (60ml) vegetable oil
Instructions
- In a large pot, cook the wheat starch noodles according to the package instructions. Once cooked, rinse the noodles under cold water and drain well.
- In a small bowl, mix together soy sauce, Chinkiang vinegar, chili oil, sugar, Sichuan peppercorn powder, garlic, and green onion to make the sauce.
- In a separate pan, heat the vegetable oil until hot, then pour it over the julienned cucumber and carrots to lightly cook them.
- Place the drained noodles in a serving bowl, top with the cooked cucumber and carrots, and pour the sauce over the noodles.
- Toss everything together until well combined. Serve the Shaanxi Liang Pi cold, and enjoy!
