Shaanxi Liang Pi (shaanxi Spicy Cold Noodles)

Ingredients

  • 10 oz (300g) wheat starch noodles
  • 1 cucumber, julienned
  • 2 carrots, julienned
  • 1/4 cup (60ml) soy sauce
  • 2 tbsp (30ml) Chinkiang vinegar
  • 2 tbsp (30ml) chili oil
  • 1 tbsp (15g) sugar
  • 1 tsp (5g) Sichuan peppercorn powder
  • 2 cloves garlic, minced
  • 1 green onion, finely chopped
  • 1/4 cup (60ml) vegetable oil

Instructions

  1. In a large pot, cook the wheat starch noodles according to the package instructions. Once cooked, rinse the noodles under cold water and drain well.
  2. In a small bowl, mix together soy sauce, Chinkiang vinegar, chili oil, sugar, Sichuan peppercorn powder, garlic, and green onion to make the sauce.
  3. In a separate pan, heat the vegetable oil until hot, then pour it over the julienned cucumber and carrots to lightly cook them.
  4. Place the drained noodles in a serving bowl, top with the cooked cucumber and carrots, and pour the sauce over the noodles.
  5. Toss everything together until well combined. Serve the Shaanxi Liang Pi cold, and enjoy!
