Shahi Murgh Shahi Awadhi Dum Pukht Biryani (Royal Slow-cooked Chicken Biryani)

Ingredients
- 2 lbs chicken, cut into pieces
- 2 cups long-grain basmati rice, soaked for 30 minutes and drained
- 1 cup yogurt
- 2 onions, thinly sliced
- 4 tomatoes, chopped
- 1/4 cup ghee
- 1/4 cup milk
- 1/2 cup chopped mint leaves
- 1/2 cup chopped cilantro leaves
- 1/4 cup fried onions
- 1 tablespoon ginger-garlic paste
- Whole spices: bay leaves, cinnamon, cardamom, cloves
- 1 teaspoon saffron strands soaked in 1/4 cup warm milk
- Salt to taste
Instructions
- Marinate the chicken pieces with yogurt, ginger-garlic paste, and salt. Let it marinate for 1 hour.
- In a large pot, heat ghee and add the sliced onions. Cook until golden brown.
- Add the marinated chicken and cook until the moisture evaporates and the chicken is partially cooked.
- Layer half of the partially cooked chicken at the bottom of the pot. Top it with half of the soaked rice, mint leaves, cilantro leaves, and fried onions.
- Repeat the layering process with the remaining chicken and rice. Sprinkle the saffron-infused milk on top.
- Cover the pot with a tight-fitting lid and cook on low heat for 45-50 minutes, allowing the biryani to slow-cook and the flavors to meld together.
- Gently fluff the biryani with a fork before serving.
