Ingredients

  • 2 lbs (1 kg) chicken, cut into pieces
  • 2 cups basmati rice, soaked for 30 minutes and drained
  • 1 cup plain yogurt
  • 2 onions, thinly sliced
  • 4 tomatoes, finely chopped
  • 1/4 cup ghee (clarified butter)
  • 1/4 cup milk
  • 1/2 cup fresh cilantro (coriander), chopped
  • 1/2 cup fresh mint leaves, chopped
  • 1/4 cup ginger-garlic paste
  • Whole spices: bay leaves, cinnamon, cardamom, cloves
  • Ground spices: turmeric, red chili powder, cumin, coriander, garam masala
  • Saffron strands soaked in 1/4 cup warm milk
  • Salt to taste

Instructions

  1. Marinate the chicken with yogurt, ginger-garlic paste, ground spices, half of the fried onions, and salt. Let it marinate for at least 1 hour.
  2. In a large pot, heat ghee and add the whole spices. Sauté until fragrant.
  3. Add the marinated chicken and cook until the chicken is partially cooked.
  4. Layer half of the partially cooked rice over the chicken, then sprinkle half of the saffron milk, chopped mint, and cilantro.
  5. Add the remaining rice and top it with the remaining saffron milk, mint, and cilantro. Sprinkle the remaining fried onions on top.
  6. Cover the pot with a tight-fitting lid and cook on low heat for 45-50 minutes, allowing the flavors to meld together.
  7. Gently mix the layers before serving to ensure the flavors are evenly distributed.
