Shahi Murgh Shahi Dum Pukht Biryani (Royal Slow-cooked Chicken Biryani)
This Royal Slow-cooked Chicken Biryani, also known as Shahi Murgh Shahi Dum Pukht Biryani, is a classic dish from the Awadhi cuisine, known for its rich and aromatic flavors. This biryani is slow-cooked to perfection, allowing the spices and marinated chicken to infuse into the fragrant basmati rice, creating a truly royal dining experience.
Ingredients
- 2 lbs (1 kg) chicken, cut into pieces
- 2 cups basmati rice, soaked for 30 minutes and drained
- 1 cup plain yogurt
- 2 onions, thinly sliced
- 4 tomatoes, finely chopped
- 1/4 cup ghee (clarified butter)
- 1/4 cup milk
- 1/2 cup fresh cilantro (coriander), chopped
- 1/2 cup fresh mint leaves, chopped
- 1/4 cup ginger-garlic paste
- Whole spices: bay leaves, cinnamon, cardamom, cloves
- Ground spices: turmeric, red chili powder, cumin, coriander, garam masala
- Saffron strands soaked in 1/4 cup warm milk
- Salt to taste
Instructions
- Marinate the chicken with yogurt, ginger-garlic paste, ground spices, half of the fried onions, and salt. Let it marinate for at least 1 hour.
- In a large pot, heat ghee and add the whole spices. Sauté until fragrant.
- Add the marinated chicken and cook until the chicken is partially cooked.
- Layer half of the partially cooked rice over the chicken, then sprinkle half of the saffron milk, chopped mint, and cilantro.
- Add the remaining rice and top it with the remaining saffron milk, mint, and cilantro. Sprinkle the remaining fried onions on top.
- Cover the pot with a tight-fitting lid and cook on low heat for 45-50 minutes, allowing the flavors to meld together.
- Gently mix the layers before serving to ensure the flavors are evenly distributed.
