Shahi Mushroom Masala
Shahi Mushroom Masala is a rich and creamy Mughlai dish that is perfect for special occasions or when you want to treat yourself to a luxurious meal. The dish is made with tender mushrooms cooked in a luscious, aromatic gravy, and it pairs perfectly with naan or rice.
Ingredients
- 500g mushrooms, sliced
- 2 onions, finely chopped
- 1 cup yogurt
- 1/2 cup cashew nuts, soaked
- 1 tbsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp garam masala
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1/2 cup cream
- 2 tbsp ghee
- Fresh coriander leaves for garnish
- Salt to taste
Instructions
- Heat ghee in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for a few minutes. Then, add the sliced mushrooms and cook until they are soft and the moisture evaporates.
- In a blender, blend the soaked cashew nuts with yogurt to make a smooth paste.
- Add the cashew-yogurt paste to the mushrooms and mix well. Then, add garam masala, turmeric powder, red chili powder, and salt. Cook for a few minutes.
- Pour in the cream and simmer for 5-7 minutes until the gravy thickens.
- Garnish with fresh coriander leaves and serve hot with naan or rice.
