Shahi Mushroom Masala

Ingredients

  • 500g mushrooms, sliced
  • 2 onions, finely chopped
  • 1 cup yogurt
  • 1/2 cup cashew nuts, soaked
  • 1 tbsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 cup cream
  • 2 tbsp ghee
  • Fresh coriander leaves for garnish
  • Salt to taste

Instructions

  1. Heat ghee in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
  2. Add ginger-garlic paste and sauté for a few minutes. Then, add the sliced mushrooms and cook until they are soft and the moisture evaporates.
  3. In a blender, blend the soaked cashew nuts with yogurt to make a smooth paste.
  4. Add the cashew-yogurt paste to the mushrooms and mix well. Then, add garam masala, turmeric powder, red chili powder, and salt. Cook for a few minutes.
  5. Pour in the cream and simmer for 5-7 minutes until the gravy thickens.
  6. Garnish with fresh coriander leaves and serve hot with naan or rice.
