Ingredients

  • 1 kg lamb, cut into pieces
  • 1/2 cup yogurt
  • 2 onions, finely sliced
  • 4 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 tomatoes, pureed
  • 1/4 cup ghee
  • 1/2 tsp cumin seeds
  • 4 green cardamom pods
  • 2 black cardamom pods
  • 1-inch cinnamon stick
  • 1 bay leaf
  • 1/2 tsp turmeric powder
  • 1 tsp Kashmiri red chili powder
  • 1/2 tsp ground fennel seeds
  • 1/2 tsp ground ginger
  • 1/2 tsp ground coriander
  • 1/4 tsp garam masala
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Marinate the lamb pieces in yogurt for 1 hour.
  2. Heat ghee in a large pot and add cumin seeds, cardamom pods, cinnamon stick, and bay leaf. Sauté until fragrant.
  3. Add the sliced onions and cook until golden brown.
  4. Stir in the minced garlic and grated ginger, then add the pureed tomatoes. Cook until the oil separates.
  5. Add the marinated lamb, turmeric powder, red chili powder, ground fennel seeds, ground ginger, ground coriander, and salt. Cook for 5 minutes.
  6. Pour in enough water to cover the lamb and simmer for 1 hour or until the meat is tender.
  7. Sprinkle garam masala and garnish with fresh cilantro before serving.
