Shahi Rogan Josh
Shahi Rogan Josh is a classic Mughlai dish known for its rich and aromatic flavors. This royal dish is a staple in Indian cuisine and is perfect for special occasions and gatherings.
Ingredients
- 1 kg lamb, cut into pieces
- 1/2 cup yogurt
- 2 onions, finely sliced
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 2 tomatoes, pureed
- 1/4 cup ghee
- 1/2 tsp cumin seeds
- 4 green cardamom pods
- 2 black cardamom pods
- 1-inch cinnamon stick
- 1 bay leaf
- 1/2 tsp turmeric powder
- 1 tsp Kashmiri red chili powder
- 1/2 tsp ground fennel seeds
- 1/2 tsp ground ginger
- 1/2 tsp ground coriander
- 1/4 tsp garam masala
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Marinate the lamb pieces in yogurt for 1 hour.
- Heat ghee in a large pot and add cumin seeds, cardamom pods, cinnamon stick, and bay leaf. Sauté until fragrant.
- Add the sliced onions and cook until golden brown.
- Stir in the minced garlic and grated ginger, then add the pureed tomatoes. Cook until the oil separates.
- Add the marinated lamb, turmeric powder, red chili powder, ground fennel seeds, ground ginger, ground coriander, and salt. Cook for 5 minutes.
- Pour in enough water to cover the lamb and simmer for 1 hour or until the meat is tender.
- Sprinkle garam masala and garnish with fresh cilantro before serving.
