Shakshuka Sensation

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1 can (14 oz) crushed tomatoes
  • Salt and pepper to taste
  • 4-6 eggs
  • Feta cheese, crumbled (for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and diced red bell pepper, and cook until softened.
  3. Stir in the minced garlic, ground cumin, smoked paprika, and cayenne pepper, and cook for another minute.
  4. Pour in the crushed tomatoes and season with salt and pepper. Simmer for 10-15 minutes until the sauce has slightly thickened.
  5. Using a spoon, create small wells in the sauce and crack the eggs into the wells.
  6. Cover the skillet and cook for 5-7 minutes, or until the egg whites are set but the yolks are still runny.
  7. Sprinkle with crumbled feta cheese and chopped parsley before serving.
