Shakshuka With A Tunisian Twist
Shakshuka is a popular North African and Middle Eastern dish made of poached eggs in a spicy tomato and pepper sauce. This recipe adds a Tunisian twist to the classic dish, incorporating traditional Tunisian spices and flavors.
Ingredients
- 1/4 cup olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 2 teaspoons harissa paste
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground caraway seeds
- 1 can (28 ounces) crushed tomatoes
- Salt and pepper to taste
- 4-6 eggs
- Chopped fresh parsley for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic, diced red bell pepper, harissa paste, cumin, coriander, and caraway seeds. Cook for another 5 minutes.
- Pour in the crushed tomatoes and season with salt and pepper. Simmer for 10-15 minutes until the sauce thickens.
- Make small wells in the sauce and crack the eggs into them. Cover the skillet and cook until the egg whites are set but the yolks are still runny, about 5-7 minutes.
- Sprinkle with chopped parsley and serve hot.
