Shaman's Stew (Buryat: Агшаан)
Buryat cuisine is a unique blend of Mongolian, Russian, and Chinese influences, and one of its most iconic dishes is the hearty and flavorful Shaman's Stew, known as "Агшаан" in Buryat. This traditional stew is a comforting and nourishing dish that reflects the rich cultural heritage of the Buryat people.
Ingredients
- 500g beef, cut into cubes
- 3 large potatoes, peeled and diced
- 2 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup cabbage, shredded
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- In a large pot, brown the beef over medium heat.
- Add the onions and garlic, and cook until softened.
- Stir in the tomato paste, cumin, and paprika, and cook for 2 minutes.
- Pour in the beef broth and bring to a boil.
- Add the potatoes, carrots, bell pepper, and cabbage to the pot.
- Reduce the heat to low, cover, and simmer for 1.5 hours, or until the beef is tender.
- Season with salt and pepper to taste.
- Serve the Shaman's Stew hot, garnished with fresh herbs if desired.
