Shan Gu Tang (mountain Mushroom Soup)

Ingredients

  • 1 pound fresh mountain mushrooms, sliced
  • 4 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 2 green onions, thinly sliced

Instructions

  1. In a pot, bring the vegetable broth to a simmer over medium heat.
  2. Add the sliced mountain mushrooms and minced garlic to the pot. Let it simmer for 15 minutes.
  3. Stir in the soy sauce, sesame oil, sugar, salt, and pepper. Let it simmer for an additional 5 minutes.

  5. Garnish with sliced green onions and serve hot.
