Shan Shui Zheng Yu, or Mountain Mist Steamed Fish, is a traditional dish from Zhejiang Cuisine known for its delicate flavors and beautiful presentation. The name "Shan Shui" refers to the misty mountains and flowing rivers of the region, evoking a sense of tranquility and natural beauty.
Ingredients
- 1 whole fresh fish (such as sea bass or trout), cleaned and scaled
- 3 slices ginger
- 2 green onions, sliced
- 2 tablespoons Shaoxing wine
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 teaspoon white pepper
- 1 tablespoon vegetable oil
Instructions
- Place the fish on a heatproof plate and make 2-3 diagonal cuts on each side of the fish.
- Place the ginger and green onions on top of the fish.
- In a small bowl, mix the Shaoxing wine, soy sauce, sesame oil, sugar, salt, and white pepper. Pour this mixture over the fish.
- Prepare a steamer and steam the fish for about 15-20 minutes, or until cooked through.
- In a small saucepan, heat the vegetable oil until smoking, then pour it over the fish to release the aromas of the ginger and green onions.
- Serve the steamed fish hot, garnished with additional green onions if desired.
