Ingredients

  • 1 whole fresh fish (such as sea bass or trout), cleaned and scaled
  • 3 slices ginger
  • 2 green onions, sliced
  • 2 tablespoons Shaoxing wine
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 teaspoon white pepper
  • 1 tablespoon vegetable oil

Instructions

  1. Place the fish on a heatproof plate and make 2-3 diagonal cuts on each side of the fish.
  2. Place the ginger and green onions on top of the fish.
  3. In a small bowl, mix the Shaoxing wine, soy sauce, sesame oil, sugar, salt, and white pepper. Pour this mixture over the fish.
  4. Prepare a steamer and steam the fish for about 15-20 minutes, or until cooked through.
  5. In a small saucepan, heat the vegetable oil until smoking, then pour it over the fish to release the aromas of the ginger and green onions.
  6. Serve the steamed fish hot, garnished with additional green onions if desired.
