Shandong Style Braised Duck With Mushrooms

Ingredients

  • 1 whole duck, cut into pieces
  • 1 cup shiitake mushrooms, sliced
  • 3 slices ginger
  • 3 cloves garlic, minced
  • 2 green onions, chopped
  • 1/4 cup soy sauce
  • 2 tbsp Shaoxing wine
  • 1 tbsp sugar
  • 1/2 tsp five-spice powder
  • 2 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the duck pieces and cook until browned on all sides. Remove the duck from the pot and set aside.
  2. In the same pot, add the ginger, garlic, and green onions. Sauté until fragrant.
  3. Return the duck to the pot. Add the soy sauce, Shaoxing wine, sugar, five-spice powder, and chicken broth. Bring to a boil, then reduce heat to low and simmer for 1.5 hours, or until the duck is tender.
  4. Add the shiitake mushrooms to the pot and continue to simmer for another 30 minutes.
  5. Season with salt and pepper to taste. Serve the braised duck with mushrooms hot, garnished with additional green onions if desired.
