Ingredients

  • 2 lbs pork belly, skin on
  • 1/4 cup soy sauce
  • 1/4 cup Shaoxing wine
  • 1/4 cup sugar
  • 3 slices ginger
  • 2 scallions, cut into 2-inch pieces
  • 1 star anise
  • 1 cinnamon stick
  • 1 cup water

Instructions

  1. Bring a pot of water to a boil and blanch the pork belly for 5 minutes. Remove and set aside.
  2. In a separate pot, combine soy sauce, Shaoxing wine, and sugar. Cook over medium heat until the sugar dissolves.
  3. Add the blanched pork belly, ginger, scallions, star anise, and cinnamon stick to the pot.
  4. Pour in the water and bring to a boil. Then reduce heat, cover, and simmer for 1.5 hours.
  5. Uncover and continue to simmer until the sauce thickens and coats the pork belly.
  6. Slice the pork belly and serve with steamed rice.
